#ASmoothieADay

Super-simple, vegan smoothies that can be whipped up without needing to use exact measures or fancy ingredients (unless you happen to have them handy). There’s no complicated method – just put the ingredients in a blender and press play ▶️

Whilst I was practising self isolation and social distancing (before and during the UK lockdown) I was keen to make sure that I was eating healthily. Smoothies seemed like a plan as they are an economical way to get a nutritional boost when you aren’t feeling 100% or need to use up leftovers or, just because they are DELICIOUS!

I quickly realised that this was something  I wanted to share so, over on my social media, every day for a week, I posted a homemade a smoothie. Now, here they all are, in one blog post.

I haven’t included quantities on the ingredients list, just use your common sense; it’s pretty organic – for example: one small banana or one cup of fruit/veg per person and then add milk/yoghurt to taste.

Monday

Spinach, Kiwi and Mango Muesli

Spinach, Kiwi and Mango Muesli Smoothie

INGREDIENTS (add to taste / number of servings required)

  • Spinach
  • Kiwi
  • Mango
  • Muesli
  • Soya Milk (for consistency)

I used a pre-prepared, frozen smoothie mix from Tesco for this smoothie but of course, fresh is always better.


Tuesday

Raspberry, Oats and Chia Seed

Raspberry, Oats and Chia Seed Smoothie

INGREDIENTS (add to taste / number of servings required)

  • Raspberries
  • Vegan Vanilla Yoghurt 🌱
  • Oats
  • Chia Seeds
  • Soya Milk (for consistency)
  • Vegan Raspberry Ice-cream (optional) 🍨

🌱 I always use Alpro because all the other vegan yoghurts I have tried taste like cardboard (which although vegan, isn’t very delicious).

Wednesday

Blueberry, Banana and Chocolate

INGREDIENTS (add to taste / number of servings required)

  • Blueberries
  • Banana
  • Liquid Chocolate 🍫
  • Soya Milk (for consistency)

🍫 Sweet Freedom CHOC SHOT Liquid Chocolate is plant based.


Thursday

Banana, Peanut Butter, Oats and Coffee

Banana, Peanut Butter, Oats and Coffee Smoothie

INGREDIENTS (add to taste / number of servings required)

  • Banana 🍌
  • Peanut Butter
  • Oats
  • Coffee 
  • Soya Milk (for consistency)

🍌 I use 1 banana per serving
 I add 1/2 a tsp of instant coffee granules per banana


Friday

  • Red Grapes
  • Vegan Plain Yoghurt 🌱
  • Soya Milk (for consistency)
  • Muesli

Saturday

Beetroot, Baby Plum Tomato and Celery

Beetroot, Baby Plum Tomato and Celery Smoothie

INGREDIENTS (add to taste / number of servings required)

  • Beetroot 🤎
  • Baby Plum Tomato
  • Celery
  • Apple Juice (for consistency)
  • Black Olives (optional)

🤎 Beetroot can give an ‘earthy’ taste that some folks aren’t keen on so you could swap it for apple.


Sunday

Coconut and Pineapple

Coconut and Pineapple Smoothie

INGREDIENTS (add to taste / number of servings required)

  • Coconut Milk
  • Pineapple

As always, fresh ingredients are better than frozen or tinned but, not always readily available or practical so, we use what we can where we can and this example was made with tinned coconut milk and tinned pineapple in juice. As the pineapple and coconut milk naturally react with each other, the finished smoothie can separate a little if left standing but, that does not affect the taste and anyway, you’re going to drink it straight away – right?
